There are few more iconic Italian classics than linguine with mussels. Combine cooked pasta with mussels and herbs cooked in white wine and add butter. Mangia!

Ingredients:
8 oz pkgThree Bridges Organic Linguine
2 lbmussels, debearded and scrubbed
1 cupdry white wine
2 tbspgarlic, chopped
1/2 tspblack pepper
4 sprigsfresh thyme
2bay leaves
4 tbspleek, julienned
4 tbspcarrot, julienned
4 tbspbutter
1 tbspfresh parsley, chopped
Instructions:
  1. Cook pasta according to directions on the package. Drain, cover and keep warm.
  2. Combine the mussels, wine, garlic, pepper, thyme, bay leaves, leek and carrot in a large, deep sauté pan. Cover the pan and bring to a boil. Steam until the mussel open.
  3. Reduce the cooking liquid by half, stir in the butter and add the linguine and gently toss together.
  4. Serve in large soup plates, sprinkle with chopped parsley and serve with French bread. Enjoy!
