Superfood Ravioli Salad

 

Ingredients:
1-8oz Three Bridges Superfood Ravioli
2 cups fresh spinach, tightly packed and thinly sliced
2 cups red cabbage, thinly sliced
2 large carrots, peeled and sliced
1 red bell pepper, sliced into matchsticks
1 cucumber, cut into half slices
1/2 cup fresh parsley leaves, torn
2 tbsp sesame seeds
For the Dressing
1/3 cup olive oil
1/2 cup lemon juice, fresh
1 tsp cayenne pepper
1 tsp honey
1/2 tsp kosher salt
Instructions:
  1. In a jar with a tight fitting lid add all salad dressing ingredients together and shake to blend. Set aside.
  2. Cook Ravioli according to package directions. Dip in cold water to stop cooking. Drain. Place ravioli in a large mixing bowl.
  3. Add the spinach, cabbage, bell pepper, carrots, cucumber & parsley.
  4. Pour desired amount of dressing over the salad and toss until everything is coated.
  5. Sprinkle on sesame seeds. Serve & enjoy!
