Pomegranate
Roasted Salmon with Cranberry or Pomegranate Orzo

Serves 4
Ingredients:
4- 7oz Salmon Fillets
Pomegranate
Marinate Ingredients:
1 cup Pomegranate Juice
1/2 cup extra Virgin Olive Oil
2 tbls. Chopped Parsley
1/2 cup Red Wine
1 tbls. Kosher Salt
1 tspn. White Peppe
Procedure:
Marinate Salmon for 4-6 hours.
Pomegranate
Glaze Ingredients:
Note: Mix and bring to a boil the following:
1/2 cup Pomegranate Juice
1/2 cup Roseís Grenadine
3 tbls. Brown Sugar
1 tbls. Chopped Shallots
1 tspn. Chopped Garlic
1 tspn. Kosher salt
1 tspn. White Pepper
Procedures:
1. Reduce heat and add 2 tbls. Corn Starch mixed
in 1/4 cup cold water. Simmer until thickened.

Meanwhile heat oven to 450 degrees. Remove salmon from Marinate
and pan roast in oven for approx. 12 min. Remove Salmon from oven,
serve over Pomegranate Orzo, along with your favorite green vegetable
and top with Pomegranate Glaze.
