Fruit Salad with Pomegranate Vinaigrette

Serves 4
Ingredients:
8 oz. Arugula
12 slices Mango
12 slices Papaya
12 slices Kiwi
8 Bread stick, croutons or pita chips
Procedure:
Neatly divide the above into four equal servings and top with Pomegranate
Vinaigrette (see below).
Pomegranate
Vinaigrette Ingredients:
1 cup Olive Oil
1 cup Pomegranate Juice
4 tbls. White Sugar
1 cup Rice Vinegar
2 tbls. Chopped Shallots
1 tspn. Chopped Garlic
1 tspn. White Pepper
Kosher Salt to taste
Procedure:
Mix total ingredients in blender
