Hobbs' Applewood Smoked Bacon, sliced or slab,
is one of our signature offerings. Our "California Style" bacon
is cured and sweetly smoked to enhance the pure pork flavor,
which translates into rich, redolent taste. Our sliced bacon
is center cut with two lean streaks. We never use excessive,
harsh smoke, nor disguise our bacon with too much salt or sugar
as a substitute for good flavor.

Fully cooked and ready to serve. Unlike the so called "Canadian
bacon" , which is chopped, reconstituted, and stuffed in artificial
casing, Hobbs' Smoked Pork Loin is made from the center cut
whole muscle and is very lean and tender.

FLAT TAVERN HAM 12-14 LBS. R.W. Our traditional
methods of trimming, curing, and smoking produces a lean, yet
full flavored boneless ham with a pleasant sweetness. The result
of time proven methods is wonderful product, which we feel is
the absolute best.
BLACK FOREST HAM 5-7 LBS. R.W. A very lean
ham, fully cooked in its own natural juices and cured with a
special blend of herbs and spices. Hobbs' Black Forest Ham is
distinguished by its rich taste and tradition-al dark colored
exterior.
BONELESS DELI HAM 12-15 LBS. R.W. This
ham is fully cooked in its own natural juices and is great for
baking and glazing. It is full flavored, sweet, and moist. TASSO
3 LBS. R.W. Cured pork strips which have been smoked and heavily
seasoned. This product is used in many Cajun dishes and as a
flavoring agent in many innovative recipes.
WESTPHALIAN ROLLED HAM 4-5 LBS. R.W. Hobbs'
Westphalian Rolled Ham is dry cured for 12 months and carefully
cold smoked over juniper berries and twigs for an extremely
lean and tender ham.
HOBBS' SMOKY MOUNTAIN HAM 13-18 LBS. Our
dry cured country ham is smoked and aged exactly as it has been
done since colonial days in the Ozark Mountains.
HOBBS'TURKEY & CHICKEN
SMOKED TURKEY BREAST 7-9 LBS. R.W. We use
all white meat whole turkey breasts which are tied into a plump
boneless roast. The breasts are cured and applewood smoked using
the same methods we use in smoking our hams. The result is eating
at its easiest and best: a boneless, moist, tender, and pink
product with outstanding flavor and zero waste. Virtually fat
free!
SMOKED LARGE CHICKENS 6-7 LBS. R.W. We
begin with young plump birds; then we slowly cure and smoke
them to perfection. This method results in a product that retains
the texture of chicken with a pleasing blend of spices and the
sweet California style of applewood smoked aroma.

SPECIALTY PRODUCTS RUSTICA PROSCIUTTO 10-12
LBS. Rustica Prosciutto is created from an ancient recipe; meeting
all the requirements for producing a genuine Parma style proscuitto
with a wonderful natural taste achieved without the use of nitrates.
Skill and patience are taken to cure and age our premium ham
for at least 12 months.
RUSTICA PANCETTA 6-7 LBS. R.W. Rustica
Pancetta is an Italian style lean pork belly with an aromatic
rubbing of herbs and spices which are "bedded down" in order
to develop a truly superior product that is rolled and dry cured
to intensify its flavor. An essential ingredient in most sauces,
it enhances the flavor in all cooking applications.
RUSTICA PEPPERONI 2-3 LBS. R.W. STICK OR
5LB. BAG SLICED This is the old fashioned air dried sausage,
not the so called "cooked pizza topping." RUSTICA COPPA 2-3
LBS. Our Rustica Coppa is a truly delicious product aged under
carefully controlled conditions in the "old world style." Originally
produced in Northern Italy, it is naturally dry cured and should
be sliced thin to release its' savory flavor.

Rustica Prosciuttini Speck is a finely marbled delicacy which
can be served as a thinly sliced antipasto or tapas and is exceptional
in a composed salad. Natural dry curing of a minimum of 7 months
allows the Prosciuttini Speck to attain a perfect cure for a
fuller, meatier flavor.

of our most famous products. We start with our delicious Rustica
